Best Easy Vegan Breakfasts

I've always been big on breakfast, ever since I was little. I love taking the time to relax before a busy day with some reading or Gilmore Girls with my coffee and breakfast in the morning. I definitely agree with the largely spread idea that having a good breakfast and start to your day = a better day ahead, even if it means waking up a little earlier than you'd like. 

Avocado Toast

There's no breakfast that I love more than avocado toast. Avocados are high in monounsaturated "good" fat, which helps lower bad cholesterol, and are a great source of B vitamins which can help in fighting off disease and infection. (source)

-1 ripe avocado mashed

-2 slices toasted ezekiel bread

-chia seeds

-roasted pumpkin seeds

-salt + pepper

-baby cherry tomatoes

If you're not a vegan like me, add one fried or poached egg to each slice.

Banana Toast

See a toast trend here? High in potassium and fiber, bananas were probably one of your first foods for a reason. They're easily digestible, are easily mashed, and available virtually year round. (source)

-1 ripe banana sliced

-2 slices toasted ezekiel bread

-almond butter

-jelly or jam

-chia seeds

You can also add other seasonal fruits like strawberries or blueberries. 

Oatmeal Bowl

Quaker's dinosaur egg oatmeal was my jam when I was a kid. Since we were never a big sugary cereal family (OG Special K all the way!), that was our one breakfast indulgence. Now, this is my indulgence. 

-3/4 cup cooked oats

-1 banana

-chocolate chips

-coconut flakes

-granola

-chia seeds

-almond butter

-cinnamon

-agave nectar

A little indulgent, but super delicious!

Chia Pudding

This is so easy to make the night before you want it and bring it to-go with you the next morning. These tiny seeds are packed with fiber and antioxidants, and as you can tell from all of the above recipes, can be added to just about anything. (source)

-4 tbsp chia seeds

-3/4 cup almond milk

-1 tsp cinnamon

-1 tsp vanilla extract

-2 tsp agave nectar/honey/maple syrup

Mix it all up, allow to sit overnight, and top with your choice of fruit.
